I'll start with the one I just did.

Spicy Sweet Potato Mash.

Ingredients:
2 largish sweet potatoes, peeled and chopped into 1" cubes
~25g Butter
1-2 Dried chipotle peppers, rehydrated in a bowl with a bit of boiling water and chopped finely.
1/2tsp harissa paste
1/2tsp salt

Weaponry:
Steamer of some kind, I bodged it with a colander and some foil to make it fit the pan properly.

Method:
Stick an inch of water in the bottom of your steamer pan and bring it to a boil.

Cook them for 18-20 minutes until squishy, drain and throw into a bowl or the (emptied) pan you steamed them over. add the butter, peppers, harissa and salt. Mash a bit, then attack with a whisk to make it a bit smoother and get everything well mixed.

Stuff your face.

Also, you can use the recipe above to make sweet potato cakes.

Follow the recipe, but don't add butter. Instead add some finely chopped onion and garlic that you've fried off. and some chopped coriander. maybe a bit of cornmeal if it's a bit too wet.

Leave to cool for 20 minutes and form into balls, smoosh into rounds.

Glaze with a whisked egg and coat with breadcrumbs.

Stick in the fridge for a few hours to set. (or freeze them for later, should work)

Fry in some butter and a bit of oil on medium until crispy on the outside and heated through.

They're good as roast veg on a sunday dinner plate.

Grab your parsnips, carrots and sweet potato and cut them up into ~2cm cubes, If you're doing a big roast these can go around the meat in the tray for around the last 20/30 mins.

Take them out as the roast rests, give them a dose of salt, pepper and a sprinkle of mint or rosemary.
