Right now i'm using these:

Cartographer makes the map a bit more useful, adds co-ordinates.

Gatherer adds a note to the map every time you pick a herb or mine a rock.

Auctioneer most handy, shows you AH prices of everything, can automate selling to some degree.

Currently using FuBar, get my addons and their updates using WoWAce.
Anyone got a working Damage/Healing meter?

ArenaMaster - identification and assistance addon for arena combat
Assessment - addon for measuring damage done, healing done, healing taken, and so on.
Atlas - instance map addon, shows directions and bosses and such as well
AtlasLoot - displays loot in Atlas for each boss
AG Unitframes - unitframe replacement addon
BigWigs - addon assisting in killing raidbosses
BabyWigs - bigwigs addon for old world 5man instances
LittleWigs - bigwigs addon for TBC 5man instances
Bartender 3 - actionbar replacement addon
Cartographer - pretty good map replacement addon
Squeenix - cubic minimap, rather good
Parrot - scrolling combat text, almost like the one in-game but much better
Prat - improved chat addon
TinyTip - new and shiny tooltips
TinyTipOptions - options for new and shiny tooltips
Omen - addon for measuring threat
OneBag - all bags in one frame
OneBank - all bank bags in one frame
oRA2 - raid assistance addon, in case you would ever.

Some interesting ones there, but I don't know what half of the others mean. Links to pages with info would probably be more useful, rather than links to download I mean. For the noobs like me.

Auctioneer, All-in-one Inventory and Cosmos/Khaos which is a suite of loads of different add-ons which keeps itself up-to-date.

Most obvious bits are Alpha Map - which can superimpose a map of the area on the screen, Party Quests - which imporves the quest log so you can see them all and QuickLoot - which has saved me many mice.

Pretty much what Baliane posted above - it's a typical list of 'must haves' for any raiding guild.

I try and to anything that is FuBar compatible (FuBar is just an interface menu bar for all your addons that sits along the top of your screen and keeps everything neat and tidy).

I also prefer to stick to anything that is AceUpdaterable - i.e. fire up AceUpdater and manage all mods from there. Makes life a fuck load easier when theres a patch and everything needs updating.

We should all get used to using threat meters too. Threat is what causes a mob to attack you rather than another person, if we all use the same threat meter we can all see who is generating threat and allows us to moderate our attacks to not take aggro off the tank (helps me as a healer too, means I know who to concentrate on)
I use TKLH Threat Meter, I noticed Baliame uses Omen, anyone know if one is better than the other?

For any Druids I strongly recommend SmartyCat and Innvervator, the first one tracks your mana whilst in feral form and the other reminds you when your innervate is ready much usefulness when your healer is running out of mana.

Anything that's based on Ace is much better than anything that isn't. Omen is. KLHTM is not.

There however is Threat-2.0 (alias Omen Library) and oRA2 (alias CTRA á la Ace)

Ones I've been trying from wowace so far, and like, are:

AckisRecipeList - Gives you a button at the top of your crafting panel to show you all the recipes you haven't got yet, and where you can get them from
<strike>Analyst - Shows a summary of the money you've made/spent with a breakdown of where
AutoDing - Announces to the guild when you level, could get annoying</strike>
BadBoy - Automatically ignores and auto-reports gold spammers, absolutely priceless
<strike>Gratz - Tells you when other people ding</strike>
Omen - Keeps an eye on the hate levels, very useful if your pet tanks for you, or in a group
OneBag/Bank/Ring - One big window for all inventory

Aha! I knew we had an addon thread. I've settles into my addons now;

Auctioneer - Essential for me. Tells me how much I should sell shit for on the AH and gives you some useful tools for doing it. Also gives tooltips showing how much stuff is worth.
Questhelper - Another essential. Shows you where you need to find the particular type of bear whose arse you're collecting. Rely on it exclusively at your peril though.
MobInfo - Tells you a bit about the bad guys. I like it for tracking loot drops.
Atlas - I prefer this to Cartographer.
Atlasloot - Allows you to look through all the items in the game and pick out stuff you like. It tells you where they are and who drops them.
FuBar - Top and bottom bar that lets you put little mini-addons on. Gold and durability are useful plugins.
OneBag/Bank - Saves you having to look through all your bags for that particular thing you want.

What I'm using at the moment:

AtlasLoot - For the purples
Bagnon - All-in-one inventory + can look in your bank anywhere
BigWigs
Healbot - For the occasional time someone insane enough asks me to heal
Itemrack - For swapping between gear nice and easy
Omen - Threat thing
Recount - DPS thing
Titanbar - Great UI add-on, adds a bar which can have all sorts of information such as gold tracking and repair stats.
Xperl - Great looking unit frames, easy to use and functional
Combo Points Redux - Very simple add on which simply counts your combo points and displays them wherever you want. A must for any serious Rogue / Druid. Think it helps in some vehicle based boss fights (Occulus / Malygos)

I use the Curse client now that Cosmos is dead. It doesn't have as many add-ons, but a load broke with V3 anyway. I run it before WoW and it checks for updates.

ActionButtonColors - red for out of range, blue for OOM - I use this a lot on Death Grip when closing in on mobs

Durability Status - Little icon with your gear health %
EasyMail - Grab everything at once and autofills your friends names in the To field
EQCompare - Pops up what you have equipped whenever you hover over an item's icon
FriendsFacts - Remembers stats of offline friends
FuBar 3.5 - One line info at screen top, currently only Friends, Guild, Bags, Combat Time, PetInfo and RecZone work
Gatherer & db - For herbing and mining
Mobinfo - Remembers kills and drops in a database, shows quest objectives and progress when hovering over mobs
Omen - Keeps an eye on the hate levels, very useful if your pet tanks for you, or in a group
OneBag/Bank 3 - One big window for all inventory
QuestHelper - connects to friends with it installed too

Sells all the grays in your bag with one click. You can also add other items to auto sell if you so wish.

There's an addon for everything - Bag Sort is the simplest one that does what you're asking for.
