the deject kit is the best!
seriously, I don't really like any kit over another, simple because they are all vitally important.
I would love the medic the most, but the tanks kinda ruin a medic's day. I find myself playing Anti-Tank a lot...

Engineer when playing properly and trying to help the team, I unlocked the assault and sniper guns hoping to make them more appealing, but it hasn't really worked.
Spec Ops when arsing around as you have reasonable range and can blow stuff up.

I used to mainly choose medic, until i unlocked the F2000 for assault. Damn, that gun can deliver some serious pain!
G36 weapons suck

Anti-tank because blowing up vehicles is very satisfying.

Assault generally, but the snipers can come in very handy on some maps.

From my very limited experience with BEEF2, I quite liked the assault kit.
