but what happens if everyone who bought tickets showed up? Do they just strap some passangers on the wing?

Passengers get given the choice to take a later flight and accept compensation (within Europe there are minimum levels of compensation, and they're very generous, involving cash payments, meals and a hotel - in the US, they're relatively shitty, and the best I've been offered there is a free round-trip ticket). If there aren't many volunteers, you can normally negotiate your compensation with the airline pretty effectively. If there are no volunteers, then someone gets forced off, put on a later flight, and given the minimum compensation.
