More Game Demos have been added to the PSP section in the /downloads area, including Ape Escape Racer & Bounty Hounds.
I plan on visiting the PlayStation Spot site in Bristol at some point, and downloading all the exclusive demos, and hosting them here at 5punk.

Ridge Racer 2 has been added to the downloads section, and you can play this demo on 2.80 firmware.

The special christmas edition demo of Loco Roco has been added to /downloads, however I am not aware of what firmware version you need to run it.
It's the Japanese one for now, but I'm sure an English one will come out later in the week or something

I have one that works on 2.80+. I was waiting for an english one to appear before uploading, but you can have this if this one isn't hex-edited.
