Well, these went down well at the bash, so I'll share the recipe.
Stuff to know: It's an american recipe, so uses cups as a measure, 1 cup =250ML, so use that as a starting point and use a jug or something to measure.
I strongly suggest power tools for this recipe, you could probably do it with a balloon whisk, but you'll regret it.
Ingredients:
Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
225g melted butter
1 1/4 cups cocoa, sifted
1/2 cup flour, sifted
2 teaspoons vanilla extract
Or
1 1/4 tsp orange oil
1 1/4 tsp cointreau
Or
2 1/2 tsp cointreau (I've not tested this, but I reckon it'll work)
Method:
Stick the oven on at 150c
Find a suitable tin, I use a 25cm X 18cm thing, grease it and dust with flour
Stick butter into a bowl or jug and nuke it on medium until melted.
Crack all your eggs into a large bowl and whisk until sorry, add both sugars and whisk more.
Add additional flavouring (either Vanilla or Orange) Hell, both might work, I've never tried, whisk a bit more.
Add the butter, cocoa and flour, whisk again until it looks less glossy.
Pour mixture into tray and stick in oven for 40-45 minutes.
Take this opportunity to lick the whisk and bowl clean, it's delicious*
Poke a toothpick in the top after 40 minutes, it should could out nearly clean.
Turn out onto a cooling rack and leave it for 20-30 minutes to set, then slice into lumps with a pizza cutter (for some reason this works better than any knife I've tried)
Nom.
*Don't do this if you're under 8, pregnant or really bloody old. You're about as likely to be run over in your kitchen as you are to get salmonella from eggs in this country, but if you're broken it's best to be careful.
