That's a bit of a wide open question. With a 3GS you can play around with GPS, Augmented Reality and video editing apps, none of which I know about because I have a 1G iPod.
The Google Earth and Wikipedia apps are always useful to have around. The good games I have aren't free, but they're £3 at most. There's usually "Lite" demo versions to try.

Here's some stuff I have which may be of interest:
Shazam - I use this quite a lot and it works remarkably well.
Official Last FM, eBay and Facebook apps can be useful if you use the services.
Tube Status, TheTrainLine and AroundMe can be useful for travelling.
I don't play many games on it but here's some I have which are good:
Free: Wild West Pinball and Lemonade Tycoon
Not free: Peggle, Edge, Rolando and Wolfenstein RPG.
Wolfenstein is especially good, even better than Doom RPG.
