According to http://forums.worldofwarcraft.com/threa ... 2045&sid=1 it seems (as expected) you need a L55 character to create a Death Knight when Itchy Ring comes out. Unfortunately, at least at first, you need a L55 on every realm you wish make a Death Knight on - which wasn't what I'd heard.
This saddens me a little, I'm sure the restrictions are in place to avoid an overproliferation of DKs (some hope) but while the first restriction rewards experienced players, the second maybe rewards those who perhaps play a little too much.
I've got chars at L36 and L44 on the servers I play on at lunchtimes, and while I'd given up being able to join my cow orkers in their journey from L70-L80, I had hoped they might be up for a bit of Death Knightery. Still, I have a month to get up there, I guess - it just delays my push for Outland 5punking a bit.

I didn't know about the realms bit, but I'm not really surprised.
I've been wondering about these Deaf Knights. The original Death Knight was what's-his-name from Warcraft 3, who went on to be the titular Lich King. Death Knights are his boys, but in WoW they're available to both sides. I can't help but wonder if there's a bit of a twist involved.
I've only got 4 levels to go before I'm eligible to find out anyway. Wonder what an undead Tauren looks like.
