Werd up childrens!
Do any of you know of any software (needs to be software as the sticks we'll use this on don't have manual locks or anything) that can set USB sticks to be read only?
We mainly have Windows machines so we don't have the luxury of mounting them as read only from the off

But nothing to stop this being reversed, so something that encrypts the files so they won't be visible unless it's running would be better.

I think http://www.truecrypt.org/docs/ lets you do read-only ones.

I've used Reflex Disknet in the past. It's designed for removable media control, including USB sticks. It can lock them down, encrypt them, or stop them being used entirely. It's server based so it can be done per user or workstation too.

I reckon their biggest customer is very possibly the MoD (when people actually fucking use it), so it's not too shabby. I'm also pretty well trained in it, so I'm confident about pimping it. Don't know how expensive it is though, and it's probably a bit overkill unless you're after a site-wide solution.

I've been experimenting with this and it works well enough, plenty of options. I mostly like it because there's binaries for Windows and Linux.
