Video editing is something I have never done so I have no idea how to capture images from it, either from DVD or AVI/MPG/MOV, which is the best and easiest way?

Importing it into a video editor, is usually the best way.. (Woo. Go logic?)
XP comes with a crude "Windows Movie Maker" which allows you to cut and swap bits around.

Also, you could try
VirtualDubMOD. Free and simple, but reasonably powerful.

Check out EO Video. I use it to convert movie files to animated GIFs and it very probably does stills. If I want to get a still off a DVD I use Power DVD.

I use Ulead Video Studio (8 I think, but there's a new one now). Easily found on a floor near you.
It's quite a simple wizard-based thing, but it can copy from the DVDs my DVD Recorder makes, as well as real ones, although sometimes DVD Decrypter (free) is required to remove that pesky country-specific stuff.
You can chop clips up and drag them to the timeline - do some (admittedly rather crap) effects/titles and export. It is a bit crash-prone when exporting, but not too bad if you save often and learn its quirks.
I usually put the outputted file into Adobe Premier if I want to do some proper effects, but that's usually overkill for most projects.

Oh I didn't even think about that, it seems to do the job on video files, thanks Grimmie. But I'll have a look at the other software when I need to do something a bit more advanced. Cheers

eww. bad bobbins.
honestly, vdub does almost anything you'll ever need (vdubmod adds functions and removes stability)

I think Ulead Video Studio handles them, the old version I've got crashes rather a lot though.
