Speaking from a raid guild perspective, a druid off tank is nice because when they're not tanking they can still put out fairly decent dps in kitty form (and vice versa).

Priest
A common misconception about the Priest is that it's a weak class that only excels at healing. This is not true, Priests can not only heal just as well, if not better than other classes but they can also provide great DPS, utility support and if PVP is your thing, survivability.
Talents
Look
here for Priest talent trees and explore:
Holy, Discipline, Shadow. The first two are often combined for a typical PVE healing spec. Shadow is also combined with Discipline in a typical PVE spec.
Without going too in depth into talent specs the short of it is, Shadow = DPS, Holy = Healing, Discipline = Survivability.
Leveling
The first 10 levels can be a bit of a struggle but it does get easier. At about level 8 you get
power word: shield(PWS). Now the other thing you must do is get yourself a wand! the way I level is this, I cast the first Priest dot on an enemy
SWP then cast PWS and proceed to wand the enemy to death.
It's not the most exciting way of doing things but you don't have much choice if you want to keep mana up at the start. I strongly advise speccing in Shadow for leveling. The main reason is that it increases your DPS by a lot (important for soloing) and it also gives you a bonus to spirit every time you kill an enemy that gives experience (with spirit tap talent)
Add in the fact you have a few healing spells to top up your health, you can turn into a monster mashing machine without ever needing to eat or drink! As the talent gives you a spirit bonus I strongly advises taking spirit items over anything else, including int+ and stam+.
Raiding
I cannot write anything here as I have never raided as a priest. I don't know enough about the class for this to be a Priest 101 guide it's more of a don't be scared to try one plea.
Gear In the good old days priests would roll on cloth items with +heal and mucho spirit or mp5. Now that Blizzard have totally destroyed the line between DPS and healing gear you will find yourself rolling on items that Mages/Warlocks(spirit whores) are also wanting.
Priests benefit from crit a lot more now as well so if you are in a raiding guild expect some serious competition for gear.

If you can stick with a priest past 20 you will begin to really appreciate the class, at 40 you get shadow form(see shadow talents) and then it really is plain sailing.
One final note, if you have wide screen upwards of 1680,1050 I strongly suggest this
UI, made by someone who raided as a shadow priest so it's all very good

What about the Herbalist self-heal skill then? Seems to me that Herbalist/Alchemist/Cooking/First Aid sound perfect! Herbalism gives you a self-heal bit after a certain level, alchemy doubles effectiveness of potions you can make, make your own food, (I love the ones that give you a healthy 'well fed' status) and first aid for those perk-me-up bandages and anti-venoms and such.
I truly love what professions can bring to a character. Currently, my warrior is a Miner/Engineer. Miner for the toughness bonus, and engineer so it will be able to open locks w/ charges, and res w/ the Swiss army knife thingy. But now I'm reconsidering.....

I do like professions. In fact I like anything that gives me a bit of variety from the grind, and professions have the bonus of occassionally giving me something useful. As for the herbalism heal, it's not that great because it only restores maybe 10% of your health, but it is instant cast so can be a useful 'oh shit' button while your proper heal kicks in.

It's a great save your arse mid combat button, but not much else.

One quick question - fishing, how important is it? It gets mentioned a lot, but I've not really touched it yet, but I just saw berk's pro-tip on levelling it a bit after every ding, and thought that I should maybe catch up on it today. I use skinning, leatherworking and first aid a lot, so they should be fine.

Some fish and associated dishes can sell for a reasonable amount. I've maxed fishing out, but it's really only been a distraction and not essential. I've not bothered with it on any of my alts.

I had a thought today while talking to Anery about 5punk and Eve. I think we should be making more use of the Spunkchat channel. We've a few people who aren't in the guild, and with a few leaving for raid guilds it's a far better way of keeping 5punkers chatting. At the moment guild chat is the main channel, but it's not difficult to use spunkchat instead, in the same way as the Eve-ers use X-5punkers. It can be a pain in the arse having to /5 before you say anything, but there are plenty of chat mods out there that do away with that, and chaning the spunkchat channel to a pleasant magenta really helps it stand out.

There was some sort of chat mod I used to use while I played, the name escapes me at the moment but it was definitely ACE-based and it made the channel sticky (so if you typed into /5 then it would bring that up next time you type)

You have to type something anyway otherwise you're hitting shortcut keys. I type /g or /p at the start of every message kind of automatically, I never worked out what you're supposed to do to talk.
Only trouble with the spunkchat channel is you can't link items in there.

You can't? What's the point in that? Also, most channels sticky to the last used but custom ones don't without a mod.
