Also, my Riften housecarl is surprisingly useful, you can even give her orders to sit somewhere and get out of your way. I also haven't married anyone yet as I can't decide who I want to have hot lesbian sex with, why can't I get one for each house?!
Also also, I can't get the house in Windhelm because Ulfric refuses to give me the option to buy it. I joined his stupid rebellion and got his dragon hat but still nothing. I even took over Whiterun for him (and pissed off my good buddy the jarl and forgot to make a save so I could go back on my decision to march into Whiterun). I think you have to do the 'blood on the ice' quest, but it's bugged for me and won't trigger. There seem to be a few people with this problem though, so I hope Bethesda fix this.

After conning my way into the college of mages, I found my first quest a little harder than expected or, I suspect, than it was intended.
Under Saarthal.
After entering the excavations (and tossing fellow students around like rag dolls) I progress through a few Draugr (one punch), Restless Draugr (two punches) and one Draugr Wight (two arrows, four punches) when I come across a mini-boss which should be a slightly harder Draugr. However my level (which is probably higher than expected for a first ever mage quest) means the game decides to dish out a Draugr Deathlord. Many splats from a single swing of his weapon later, after trying to shut a gate on him and having tried everything else, I just have to sneak past him and frantically solve a dolphin/hawk/snake puzzle to open a gate with him bearing down on me. Even with my magic master's help we couldn't put a scratch on him.
Then, in the next room - what looks like a super-powerful Draugr called Jyrik Gauldruson. After teach gave him the wiggly lines of magictricity he went down after a couple of arrows to the bonce and a few punts in the spuds.

Yeah, I couldn't take down that guy either so in the end I cheated totally took him down with willpower alone.

I have acquired the Rose of Sanguine through a quest, which summons a Daedra to do your bidding, and have been using them as distractions for the Deathlords while I beat their face off with my hammer.

The Radiant Quest system always spawns stuff your level - the Deaf Lords are hard, even at my level (currently 36) they are a bugger. I didn't mind him being hard, like you say I could have just come back, I was just surprised the boss was so easy in comparison. I've done a few Dwemer ruins now. They're all fairly tough and you run out of carrying capacity long before the end. Beware the Sightless Pit. Were it not for a convenient save game that would have been the end of this particular character.

Is there a way to call my horsey back after he's run away and hidden from a fight?

If there is I haven't found it, if I lose my hoss I usually fast travel to the nearest spot where it magically re-appears.

I'm finding a more common problem in finding bandit corpses after I've hadukened their asses with a double cast, pimped up chain lightning. They just tend to be blasted off into the air and land several hundred yards away.

I'm going to sprint for 60 hours solid just to make up for lost time.
Edit: I only realised after seeing a meme generator thing that says something like "Play game for 25 hours. Find sprint". I felt bad when I looked at my play time.
