I've also been thinking about how to make a bacon crumble, you could use hot water crust pastry, I don't know why it's called hot water, it's got shit loads of lard in. It's the pastry pork pies are made with.
Then the baconz filling, sweet cure with possibly some acacia honey and a sprinkling of juniper to help the flavour. Some oak smoked with apple sauce maybe if juniper isn't your thing.
Topping - usual crumble mixture but with bacon salt in.
Eat then die from acute heart failure.
